Anyone know how long the current waiting period for an interview is at the US embassy in France?

If not, how do I go about guestimating this information?

For tourist and other non-immigrant visas:

https://travel.state.gov/content/travel/en/us-visas/visa-information-resources/wait-times.html

Start entering "Paris" and select it from the drop down list in the box.

For K1 or CR1, enter your timeline information and you will see a link for similar timelines.

Pardon my ignorance, I'm not sure how to "enter my timeline information". And the link you gave is just non-immigrant visas.

For the timeline, click "timeline" in your profile.  That will open your profile page and you can click "Edit / Add my entry" and on the following page click "edit timeline"

OK, thank you. Anyway to guestimate how long the French embassy is taking to schedule interviews?

If you fill in your timeline, you will get a link in your profile for "similar timelines".  You can get your guestimate there.

The Consulate in Paris is notoriously bad about responding. What visa are you waiting for? I nagged them for weeks to get a response in 2020. Last month I sent an email to the Immigrant Visa unit, and got a robo-reply that they are severely backlogged with cases. Still waiting to get a response to my inquiry.

Immigrant visas are processed for citizens and residents of France and Portugal.

Its not an exact science but you can look at DQ to Interview timelines for members from those two countries on VJ.

You could go through these timelines using these parameters I set:  I don't think DQ is a milestone in this search, but NOA2 for the I-130 and date of interview are:
