I don't understand the need for hostility towards me. I am new to this process and yes I may make mistakes or assumptions that are not right along the way, which I'm happily ready to admit if I'm wrong.

Don't make assumptions.   No hostility in my post.

YMMV

It would be great if you would fill in your timeline.

You identify a country not your SSN or bank information.   What is the risk?

YMMV

A ring is not required at any step. I'm anti ring and I've never had any rings and it never once came up during my K1 and AOS interviews.

Also, photos certainly don't hurt. In my experience, immigration officers like looking at photos

I agree. Me and my husband never got rings. Not for the engagement, not for the wedding. It never came up, not during the K1 interview and not in the AoS interview.

Don't ever put personal info in your timeline. However, the dates of your petition and visa process and the country of origin is not personal info. You don't have to give actual names.

If the foreign fiance is from a European country or from a well to do Asian country or Australia, New Zealand, etc, you're likely going to have an easy interview but there might be some issues with scheduling an appointment because of Covid. This is country specific.

The question about evidence is one that can be easily answered if one would follow the requirements from the I-129f, Petition for Alien Fiancé(e) instructions. If the IO needs additional information, then an RFE is issued for additional evidence. If one is not issued, then all the worrying or lack of this or that goes "down the drain".
