I just got the NOA2 acceptance 6-12-20 but France isn't taking appointments right now and I don't think they will start to open them soon - not to mention all the people that are waiting before us. Do you guys think it;s better if we just start all over with the CR-1 ? The goal is to be with each other as fast as possible.

Then you would stay the course.   If you get married and collect the marriage certificate and file I-130, you are starting at the back of the line.

If you wanted to make it easier on the beneficiary when moving to the US a spousal visa is the best way to go.

And of course no one know where EOs or travel bans will be in a few months, let alone a year.   Like currently a spouse of a US Citizen can travel from France to the US but a K1 holder can not without going to an exempted country for 14 days.

You are likely get get a K-1 interview soon.  Starting the CR-1 process now would mean a delay of a year or more.

Why would you think a CR1 would be faster?!? You already have your NOA2- with a CR1 you would have nothing. Plus still have to marry.

It might have been a better idea to start with (only you and your fiance(e) can say if faster time to the US is worth more complications once you get here, and how much any obstacles to getting married relatively soon matter), but with already approved petition? Almost certainly not.

First, you'd have to get together somewhere and get married, which I don't think can be the US or France right now (you'd need to find somewhere you both can go to -- both in terms of no travel restrictions in place for US or French citizens and it terms of there being reasonable ways to get there for both of you, and where two foreigners can legally marry quickly), and get your marriage certificate.

Then, you'd have to file the CR-1 petition.

Then wait for it to process (which will take at minimum, several months longer than it took for your K-1 petition to process).

And CR-1s spend much longer at NVC than K-1s do under normal circumstances, because the NVC actually does things for them.

Granted, by the time that's done, the embassy in Paris will probably be taking interviews (no guarantees), but even if it is, about a year's worth of people currently queued up behind you will now be in front of you.

And Paris was not a fast consulate pre-COVID-19.

K1 will be the quickest as you now already have NOA2. Once consulate opens, it could be three months or less until fiancée can be in the US.
