You could only submit 1 year of Tax Transcripts its acceptable BUT it helps your case if you submit 3 most recent years and also if they end up just RFE you for more financial evidence (your 2nd and 3rd tax years) later after review you have to wait 3 more months of them reviewing them again. So I would just submit 3 years to be on the safe side to save you time and legitimize your case. Also after April 2020 they count 2019 as the current tax year so I would just go ahead and use 2019, 2018 and 2017. Good Luck to you :)

You don’t need to attach all three years unless you feel they are needed to prove you sustainably meet the income requirements according to the I864 instructions.  Additionally, IRS transcripts are preferred over copies of returns especially if dealing with a consulate.

 

Item Numbers 23.a. - 25. Federal Income Tax Return Information. You must provide either an Internal Revenue Service (IRS) transcript or a photocopy from your own records of your Federal individual income tax return for the most recent tax year. If you believe additional returns may help you to establish your ability to maintain sufficient income, you may submit transcripts or photocopies of your Federal individual income tax returns for the three most recent years.

Read the I-864 instructions pdf carefully it will tell you accordling to your situation and how you've filed previously if you need W-2s and 1099 forms.
