Beaujolais Nouveau should be chilled. I'm open to trying some others, but it just seems... wrong.

I had a very disappointing Pinot Noir at a picknik , turns out it was a fine bottle but it was an 80 degree day and the bottle was hotish. Plopped it in an ice bucket and it was awesome at 55 f. (Only a wine geek travels with a bottle thermometer. I like most of my reds  60-65 and my chards 55 or so.

I know for sure that most fridges are under 40 f and you can't taste anything at that temp , imo. I always give it an hour on the counter if it was in the icebox.

So I have a bottle of this from some time ago when I was on a wine tasting trip to SLO: https://shop.laetitiawine.com/shop.ams?LEVEL=BOT&PART=BLAPNCAD16 For some reason we never drank it, and now I'm trying to think what would be good for dinner this evening to pair it with. Suggestions?

It's weird, before wife and I were dating I saw all these Facebook pics of her parties from high school and on. She had me buy all this booze for her first visit to the states, having me get this specific kind of Tequila Rose and every kind of vodka, then drank like none of it (gave it all away to friends who I'm sure drank it in a few minutes), and for our 10 years of marriage, has basically been a complete teetotaler. So weird.

Okay sorry to miss this request.

I hope it's not too late to leverage my Virtual sommelier  Service!

I love Arroyo Grande valley , but I have reservations about Pinot in that area. It's a function of being cooled by the fog in the afternoon. The Pinot Noir grapes up in Paso Robles are facing the coast. 

 

Setting aside whether this is a good Pinot Noir, the best choices to pair would have spicy, peppery or garlic tones.

Paella, Jambalya, Bouillabaisse some milder Mexican soups that sort of thing are preferences.

That said you cannot really go wrong with fatty foods steak , salmon, creamy pasta, roast chicken.

Jambalaya sounds great. Thank you! But tonight I am making sandwiches at Al's request: jamon serrano, manchego and roasted red peppers on a baguette with some aioli. And no wine: beer, as also requested. Angel City pilsner. Just waiting for the heads up to start assembly...
