Timeline

Hi, 

Once my fiance is admitted into the US on a K1 visa, is he able to attend college or enroll in a certificate program? Or is there something else he'll need first to get started? Just wondering if anybody has gone through this that may have some information available.

Generally, yes, although always best to check directly with the college or program he is interested in.

Yes, he will be able to attend. But don't be surprised if he is charged the out of state rate

He will be able to attend. One college that I spoke with wanted proof of having filed for AOS (receipt notice) and proof I was living here (e.g. a utility bill with my name on it).

Timeline

Colleges and universities in the US will ask for proof of legal status in the US.  A K-1 in a foreign passport is only valid for 90 days so you may have to wait until you have an AOS receipt or EAD or even a green card to enroll.  Check with the colleges you are applying to to make sure you have the documentation needed.  Avoid the for-profit institutions, look for a good quality community college as it is cheaper than a university and you can transfer to a university after two years.  And be prepared to pay out of state tuition for at least the first year which can be very expensive.  Most state colleges require residency of a year before giving in-state rates.  Good luck!
