Our wedding had to be postponed as our interview happened to fall after the original date. We didn’t pick a new date yet as we would like to finalize the k1 process. Will we be required to bring evidence at the consular interview of the wedding being postponed? Or some documentation with a new date?

August 2, 2018 Case Complete At Consulate

September 25, 2018 Interview in CDJ and Approved!

October 7, 2018 In the USA

October 27, 2018 Green Card received 

October 29, 2018 Applied for Social Security Card - November 5, 2018 Social Security Card received

November 6th, 2018 State ID Card Received, Applied for Global Entry - Feb 8,2019 Approved.

July 14, 2020 Removal of Conditions submitted by mail  July 12, 2021 Biometrics Completed

August 6, 2021 N-400 submitted by mail

They care that you intend to get legally married within 90 days of the beneficiary entering the US. Whether that's at your local county clerk's office, by Elvis in Vegas, at your church, or in a lavish spectacle at a resort matters not at all to USCIS.

They specifically recommend you not to fix a wedding day in advance, on the basis your visa may be delayed or denied.

 

As such they don't expect you to have a specific date set, and certainly not for the interview stage.
