I think a few pages is enough.  @adil-rafa is spot-on, imo.

Everyone's different. And sends in different amounts of evidence. All We sent to uscis was 5 photos. 3 being from our wedding. And 2 being from trips in each other's countries And just a letter that my husband wrote about how we met. We were accepted and approved and now awaiting our visa interview.

l did exactly the same and I identified who was in the photo with us.  He took more pictures and evidence to the interview but they didn't even ask to see them. They just approved him.  You are dealing with a very difficult embassy so it is important to front load your petition.

Quality not quantity. 100 pictures taken during the same visit are worth a lot less than 24 pictures taken over the course of 6 visits. Focus on better quality evidence - time spent together. Involvement with other family members is good too.

yes,  frontload it,  as in our countries the CO has already reviewed the packet and possibly made a predecision

that has to be overcome at the interview

and i say this as my mother-in-law applied for tourist visa and the letter she received at her interview was typed out the day before with a decision made

With all due respect you went through probably the easiest embassy of all. But the OP is going through the second or third most difficult embassy and needs to front-load her petition as much as possible. Your level of evidence was fine for London - possibly even overkill for London - but won’t cut it at all for Accra.

We haven't been seen at the London embassy yet. We submitted the documents requested by the NVC and paid the fees and We're just waiting to hear back from them. Oh really. Damn  It's crazy how places are different and want different stuff. I kind of just thought everywhere would be the same. It's definitely a hard process to deal with.

Yes it’s crazy. People have got through London with just a marriage certificate. No photos. No letters. Nothing. Whereas African embassies deny people who even have children together.

You'll need a lot more than just photos to be granted a visa from Ghana.  You're married, so you need evidence of co-mingling of finances as well.  Here's what we sent with the I-130 petition:

a few photos of each visit together, multiple visits over time

four or five photos from the wedding, some with family and friends

passport stamps, boarding passes, hotel receipts, restaurant receipts as evidence of these visits

joint credit card account statements

documents showing my Brazilian husband as my beneficiary on life insurance, retirement accounts, investment accounts

evidence of my husband's health insurance, dental insurance based on my employer's plan

evidence of my husband as my emergency contact at work, statement that he is my husband on employer's HR website

will and living will

Christmas cards addressed to both of us at my US address

copies of cards and letters we have exchanged

wedding ring receipts

email logs, phone call logs, video call logs to show continuous daily communication

representative chat records from WhatsApp, Messenger

Facebook pages showing our relationship with a few photos, comments from friends and family, words of congratulations on wedding day

affidavits from family members attesting to the nature of our relationship

required civil documents, marriage certificate, proof of US citizenship, passport photos, payment of fee, as stated on I-130 instructions, plus I-130A application

All of the above well-organized on plain paper, binder clips, with a cover letter/table of contents listing everything by page number, all pages clearly numbered for easy reference for the officers.

One of the above on its own is insufficient evidence, but as a whole, it tells a story that our relationship is bona fide.  We uploaded more evidence at NVC stage of 3 additional visits since filing the petition.  We're now two weeks from his interview, and I will go with him and take evidence of our 11 day trip to Paris and London last month.

Good luck!
