Finishing the process now would not make it faster or easier several years later if you chose to move to the US.

You would begin at square 1 and go through all the required steps in place at that time.

You can also apply for re-entry permit and be outside the US for 2 years without loosing your residency.

Unless OP has a good reason for having to be outside of the US for more than six months, such as a death in the family, or something as important as that. I do not think that they will be able to get the re-entry permit. From what I understand OP is going to come to the US when visa is valid, then OP and spouse are going to move to Spain as they do not know if they want to live in US or not. If you are moving somewhere USCIS is definitely not going to give you a re-entry permit and the GC will be lost and as other posters have said they will have to start from the beginning again when they want to move back to the US. As posts have been made in other forums, CBP will catch on, and then the GC will get revoked.
