A tasty low-fat loaf that can use ground pork, veal or turkey in place of the beef.... my husband loves this ... even our 1 year old girl likes :P here it is :

tablespoons vegetable oil

4 baking potatoes, peeled, sliced 1/4 inch thick

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

1 onion, thinly sliced

1 egg

1 pound lean ground beef

1/4 cup minced fresh parsley

1 tablespoon Worcestershire sauce

2 cloves garlic, finely chopped

1/2 cup fine dry bread crumbs

2 zucchini, thinly sliced

1 (8 ounce) can tomato sauce

salt and pepper to taste

Preheat oven to 400 degrees F (200 degrees C). Grease a 15x10 inch roasting pan. Place the potatoes, green and red peppers, and onions in the pan and toss with the 2 tablespoons of vegetable oil. Bake in a preheated oven, uncovered, for 20 minutes.

Meanwhile, in a mixing bowl, combine egg, ground beef, parsley, Worcestershire sauce, garlic and bread crumbs. Mix thoroughly. Shape into a loaf about 8x4x4 inches.

When vegetables have cooked for 20 minutes, reduce heat to 350 degrees F (175 degrees C). Take roasting pan out of oven and stir in zucchini. Push the vegetables to the sides of the pan. Place the meat loaf in the center of the pan and pour the tomato sauce over the loaf and vegetables. Season with salt and pepper to taste.

Bake in a preheated oven, uncovered, for 30 minutes or until done.

Simple and fairly quick. If he likes chicken wings. I buy a large tray and disjoint them. I then layer them on a jelly roll pan with foil underneath them. I sprinkle them with some garlic powder and Tony's Creole Seasoning. I heat the oven to 375 and cook until they are crunchy on the outside. Depends on your oven 1 hour more or less. Kids and everyone love these. I serve them with a tossed salad and homemade mac and cheese.

Never was into crock pot cooking until recently!

Might look into getting one!?

I have perfected beef BBQ that is so yummy and lower in fat.

Not to mention a ginger chicken, a red curry chicken, and an italian chicken with mushrooms and peppers that is lovely.

i know I'm so hungry - and I'm doing stpid jenny craig so I have not much to eat

not to mention i just had cake an hour ago...that was SO not on my diet.

Karo.. Im also doing Jenny.. hows it going for you... been on it one month. down 8lbs but last two weeks is just 1/4 lb. and im frustrated... and dammit hungry...

just started one month so far.. how long ya been on it.. any hints on how you fix your stuff ..? need some variations... fav is taking the Lemon cake .. heating it slightly putting strawberries on with ff whipped cream.. yummm.. .. but the vegis are making me hungry like 10 min after i eat.. filling at first but walk away and famished.. grrrrrrr

Oooh Jenny Craig. i'm actually considering going off of it. I can't stand how restrictive it is...you know? My main downfall is alcohol. I'm still at the age where ALL my social activities revolve around it...sucks. BUT JC is bad cause if I want a glass of wine, it's not relaly acocunted for. I do LOVE the lemon cake, however...

I don't know what I'm going to do. I have to lose weight sooo badly to gfit into a bridesmaid dress...

Finally finished with immigration in 2012!

Here's a recipe I tried out on my family last weekend:

Chicken breasts with priscutto (major spelling error), provolone cheese and roasted bell peppers with roasted potatos and roasted asparagus.

I flattened the chicken breast, layered cheese, ham (italian) and roasted red bell peppers (store bought) then rolled up the chicken,salt and pepper on both sides. Then I browned it on the stove on both sides for about 5 minutes per side in a little bit of olive oil then put it into the oven for about 20 minutes on 375. It was pretty good if I say so myself haha. You could also make a good sauce out of the drippings add some wine, chicken broth... it will become thick and yummy.

I used little fingerling potatos, put olive oil, salt, pepper, and rosemary on them and roasted them for about 25 minutes they get all brown and crispy delicious. Same thing for the asparagus olive oil, salt, and pepper. I think the temps was more for the asparagus for about 10 - 15 minutes I like mine a little crunchy.

For desert I made home made strawberry shortcake mmm with fresh whipped cream.

I'm glad you started this thread I looooove to cook and I loooove to try new recipes and cook for other people. I hope someone out there tries this!!
