I can tell you that having read hundreds of London interview experience for 10 years, all the American needs to send the UK fiancé for the interview is the I-134 Affidavit of Support and one proof of income. Two proofs if you are nervous. No evidence, chats, receipts, Facebook status, photo albums, nor any of the initial petition or the approval notice.  London does not look at evidence of an ongoing relationship.

VJ dates are estimates and are only ad good as members data.

The timelines as noted are just estimates. There are many variables that can affect the outcome of how long it takes to process the I-129f petition. Also VJ is just a small percentage of the total number of actual petitions being processed by USCIS.
 
So while they tend to be relatively accurate, it again is an estimate. Each case can vary but amount of evidence supplied, RFE's, how fast the person reviewing the petition works, sick days, vacation time, how picky the reviewer is, ect..

I received our NOA2 weeks before VJ's estimated date. It just depends! It took 5 months exactly to get our NOA2. But remember, it could take 5-7 months. 
Also, I got our update on the App. It was the first to update us of the approval. 

Right now, the wait time for K1 visa is 6-8 months (according to the USCIS website). If you think you have enough time, then go for it. But also it’s important to be conscious of the ceremony, even if it is just religious. Someone posted in the forum a couple months ago that they were denied because the person who interviewed them said they seemed “too married” already. Meaning they were denied on suspicion of already being married just because they had a formal engagement party (formal outfits, lots of guests, a celebration, etc.). 
 
So really, it’s up to you, if you think it’ll be done in time. There’s another thread right now about getting married while waiting for the k1 visa to be approved. That might be helpful. You really have to strict with the rules because any little thing can cause a denial. So even just a religious ceremony and not a legal one will probably cause issues. I’m not 100% sure on this, but it’s just some things to think about.

You should really start on the visa as soon as possible because it’s very time consuming to get all the evidence together.
 
****That being said, there’s no way the whole visa process will be done in 8 months, so you couldn’t do the January 2020 wedding and this fiancé visa. There just isn’t enough time for processing and approval. You could get married in January then do the spousal visa to bring her to the US, but the fiancé visa, in my opinion, wouldn’t be ideal for your situation.

Just as a tip, if your fiancé isn't going to be in the country when you mail the paperwork (I wasn't when my partner mailed ours in), leave all that blank. They want to see if you have overstayed.

When I was filling out the petition I paused at this section as well because my fiance  has been to the United States twice on a tourist visa.  You will see that is says "IF" and "CURRENTLY.  I realized I was over thinking this question so I left it blank and moved on.

It's worth noting that it's unlikely it'll be picked up until 6-7 months from now anyway, your fiancé might not be in the country right now, but they could be when they actually look at your file.
 
I wouldn't stress. Just leave it blank.
