You attending the interview does add a couple positive points, but truly is not necessary, as long as you have all the required documents and evidence of a genuine relationship all should go smoothly.
Manila is not a difficult embassy .. except they are very watchful regarding documents.

Yes once the case file leaves NVC after receiving the MNL# from the embassy it can move very fast. It can be a little slow with the case file transferring from USCIS to NVC .. but that is partly because of the excitement

You'll need an I-134 for both of you to complete found here https://www.uscis.gov/i-134. Follow the directions also at that link. Then you will include the following information for the interview along with the I-134:
EVIDENCE OF SUPPORT. You should be able to demonstrate that you will not become a public charge or be a burden on the U.S. taxpayers for financial support. A completed I-134 Affidavit of Support Form K1/K2 Interview Preparation Instructions – English (February 2014) Page 3 of 9 with an original signature will be useful to the consular officer to evaluate your petitioner’s ability to be financially responsible for you. You should also submit your petitioner’s most recent U.S. Federal income tax return (Form 1040) and wage statements (Form W-2). Employment letters stating salaries and bank statements may be included to substantiate the I-134.

One more item that needs your attention. Many of our answers are predicated on the information you supply in your profile. You ask them to co-sponsor then they fill out the form and include their tax information. They simply fill out the form just like you do. They will be a separate form.

It is possible that it could take longer. 6-7 months is just the current average, with most filers receiving either an RFE or NOA2 in that time period.Unfortunately there is no maximum time frame, and some unlucky filers end up waiting more than 7 months.

As long as you met within 2 years of the date you filed the I-129F all is good there.
Did you list the child on the I-129F? If yes, the rest is straight forward .. you complete TWO of everything! Passport for the child of course.
For the Support evidence (I-134) because you are a new employee, I would include a letter from the employer (or there HR dept), and copies of your pay stubs. And yes it is true that many times the embassy does not even ask for the I-134 and supporting documents. But you have to be prepared .. like a Boy Scout.

No need to update anything now but when you go to fill out the I-134 and DS-160 you'll provide your new employment status.
Once you receive your case number it's time to be in charge of what time you choose when things get done.
Start by visiting Hanks site where he has taken the time and research, and of course it helps if you spent 8 plus years helping folks in the Philippines sub-forum get their visas, where he has listed each step. With those steps he includes the what, when and why to completing the item. Many have used the website and have had little or NO problems securing a visa from USEM.

Can't really change the I-129F after it is submitted. Besides, employment isn't a requirement for approval of the I-129F petition (free to marry & having met in person within 2 years of filing is required ).
You can update all that information once your case file reaches the embassy in Manila.
After you receive your NOA2 from USCIS your case file is forwarded to NVC >> http://www.visaconnection-philippines.com/nvc-k-1.html

Make sure she has her police certificates from ANY country she has spent more than 6 months in since the age of 16. Same goes for the daughter if she is older than 16. She will need her CENOMAR and both NBI certificates. The affidavit of support I believe is one of the few items that truly needs a wet signature. If I am wrong someone will correct me.
We filed for the K-1 on June 6 of 17 and got the NOA 2 in March of 2018. 8 to 10 months seems normal. I hope yours is quicker.

Maybe an NOA2 by the end of the year if lucky.
The I-134 should be an original document with signature. After that you can have copies of your most recent tax return and W2.

Indeed. Hopefully I am wrong but I believe the affidavit (which is rarely looked at) needs wet signature.
Make sure the NBI cert has all nicknames and names used included as AKAs.

Ah ... another layer.
With the K-1 visa the embassy is not required to accept a co-sponsor, with that said they will consider a co-sponsor if it a parent or siblings... so your dad is a big plus. Still no guarantee.
No tax return and/or a new employee (hopefully) it would be good if you provide an employer letter and pay stubs.
Income must meet or exceed the 125% income requirement for the number of people sponsored.
