Checking the last 3 CR1 visa from HCM, and seems it look like they send out interview day in the middle of the month.

I done it before, so i will shared what i know so far:
-If you're US ciitizens then don't even bother about single status packet from the Vietnam Embassy. Just visited US Embassy at Saigon then request the single status from the CO( it cost 50$).
-If you're not US citizens, you need to have to single status packet from VN Embassy.

Well, most of the time they don't want to see the evidence after you marriage, so just save a few old evidence which you didn't submit to USCIS. In my case, i submit a few evidence for USCIS, few more pictures for NVC which tooks 7 years ago, and i keep the last not least is the pictures 10 years ago for the interview.

The co-sponsor can be retired, but they have to prove a sustained income (like from a pension or social security, or interest from investments).
Both your husband and the joint sponsor will fill out I-864's. If your father in-law is going to be the joint sponsor and he files taxes jointly with his wife, your mother in law will also need to fill out an I-864A -- mostly to show that she is aware of the decision to joint sponsor you.
