6 months seems very fast nowadays to be approved

The I-864 is required. 

If they leave without AP in hand, they will abandon their AOS applications.  You can not mail it to them since they need AP in hand before leaving the US.  

What type of investor visa are they on?

I presume you are trying to get them to maintain current visa status as long as they can and then sequence into adjustment pending (with EAD and AP) when that expires. If by travel permit you refer to advance parole while they have an adjustment of status application, they need that before they leave the country, if their existing visa or status has expired by then. In that instance, if they leave the country without that then they will have abandoned their adjustment application. AP card can take 6 months or more to get. so if you want them to move smoothly from their current status to adjustment pending after June, your best  chance is file ASAP so that they get AP (and EAD to continue working) in time. However, note this case may get complicated. If their current visa is a purely non immigrant visa (not dual intent), and they are using that to leave and re-enter before they get AP, my understanding is they may not be allowed back in on that after AOS is filed. Hope I have not been unclear in explaining.
 
 

Once the I-485 are filed, they will need AP to leave and be able to reenter the US.  If they leave the US without AP after filing the I-485, they will abandon the their AOS.  There is no way around this.  This is one of the limits of AOS.  If they leave without AP and use their existing visas to reenter the US, their AOS will still be abandoned.

Yes, it's that simple.  Once AOS is filed for, do not leave the US without AP in hand.

I was the first in line for the interview, at 10.15am. I was not called until 11am.
The interview went smooth, the officier looked tough (with the mask on) , but the second she talked, she was very sweet. She asked me to verify a couple of information and while she wa checking everything, she ran a background check on me which lasted approximately 10 minutes. My case had a red paper in it, she explained that it was  because I filed the exact date I was able to, and the system asked to check if it wasn't filed too early, just in case...
Then we proceeded to the questions, and verification of all my information. She asked me the civic questions and to write and read : "who can vote ?"
She said she will recommend me for approval, an hour after, my case was approved.
I am currently in line for a date to take the oath

Right. But that's the n400 online system that told me the earliest is the 07/17/2019. Online application ask you for your anniversary date on your green card and then allows you or not to file if 99 days before. 
You made me doubt for a second so I used the other uscis calculator and it says 07/17/2019

Got my approval letter today... 
Happy but weird. I called twice between the day I was approved and not a single officer told me I was approved. They told me it was being reviewed still... And I called this morning and said they were doing the last verification. And tonight I open the mail and the approval letter is there... Weird..

don't worry about the elections. any right that we got are constitutional and it will be hard for any president to repeal them.
in fact, the processing time might be way quicker because they will rush to finish the application under Obama

I understand. But also it is summer and between the crowded office and the employee's holiday... one thing and another... I was thinking it would be faster also, but hey, we got to testing and interview pretty fast too!!
Let's just wait, that's the only way

don't send to much affidavit as everybody can make those up, just send 2 or 3. bring the rest to the interview
