Just to update the thread in case anyone else is curious, getting an unrestricted SS card while on the extension letter isn't a problem. Hers came in the mail as expected.

I want to say we received our waiver letter a few weeks ago and from what I've heard it does take longer.
However, you can keep renewing your EAD/AP combo card for free while you wait.

I did the entire process, before not even knowing the fiance visa even existed. I did my research on this site, asked tons of questions, and made it through the entire process ourselves. We involved no lawyer, I didn't even speak to one. You can do it.

Only children born to parents of legal status get citizenship here would solve this.
Then the whole family could be easily deported with no fuss, no muss, as well they should be.

Yes, as everyone has said, it's not the doctor that makes the final decision. I know hearing denial is scary, but stay positive. When is your interview?
Again, you might be okay, especially if you tested clean at the doctors. Just keep your fingers crossed the CO sees it that way too..

Applicants whose 21st birthday is before the appointment date should immediately contact the U.S. Embassy/Consulate General where the interview will occur to request an earlier appointment. Failure to receive a visa before the applicant's 21st birthday may make the applicant ineligible for an immigrant visa at this time. My beneficiary's 21st birthday was March of 2012. What does this mean?

You must complete the medical and have the package with you (unopened of course) for the interview. That’s all they care about.
She’ll get some sort of letter from the Consulate to take to the medical along with her vaccination records, passport and 3 photos.
I’m not familiar with what is needed for K-1s at the interview.
Most people who are travelling do it liked we talked about above.
