To travel to other country, AO doesn't matter, you abide by their entry requirements. You will need to use AP to come back to the US.

Spouse:

2015-06-16: I-130 Sent

2015-08-17: I-130 approved

2015-09-23: NVC received file

2015-10-05: NVC assigned Case number, Invoice ID & Beneficiary ID

2016-06-30: DS-261 completed, AOS Fee Paid, WL received

2016-07-05: Received IV invoice, IV Fee Paid

2016-07-06: DS-260 Submitted

2016-07-07: AOS and IV Package mailed

2016-07-08: NVC Scan

2016-08-08: Case Complete

2017-06-30: Interview, approved

2017-07-04: Visa in hand

2017-08-01: Entry to US

Upon your return from vacation back to the US, you present AP along with your passport at the port of entry to a CBP officer.

Note that I-131 is the form to apply for a travel document, not the travel document itself.  You fill it out and submit it to USCIS along with the required documents.  Once approved, you will get a travel document, such as the I-512 Advance Parole (AP).  You present a valid AP along with your passport to be allowed back into the US if you leave.

A few questions here:

1. Do I need to include photos with the paperwork on I-131?

2. I don't have a valid passport, but I have valid ID, valid EAD (pending I-360), will have I-512. Is this enough to visit Canada (for example) and return back to US?

No, you will need a valid passport and a Canadian visitor visa.

2 passport-style photos are required for the I-131 application for AP.

I-512 AP is only for returning to the US, not for entry into Canada.  As mentioned above, you will need a valid passport and a Canadian visa to enter Canada, unless you are from a visa-exempt country -- https://www.canada.ca/en/immigration-refugees-citizenship/services/visit-canada/entry-requirements-country.html

oh, ok. So if I have a valid passport (not USA, but from my mother land) the Canadian visa will be stamped into this passport (and not into I-512). Is that correct?

Yes -- if you apply for a Canadian visa and it is approved, the visa will be stamped into your passport.  Note that you must have a valid passport to be able to apply for a visa.
