Question about marriage date vs marriage certificate

And that's one of the main parts that was making me second guess the dates, because USCIS deals with every country,  I wasn't sure how well they would be aware of other specific cultural norms vs the actual Embasy when going to her interview. For me as a U.S citizen, it's the day of the wedding, you're legally married, doing this immigration process for the last 5 years has opened my eyes quite a bit, not in a bad way.

They are aware. You can explain or not explain.  Probably not necessary, but it won't hurt.

So if OP was not in the physical presence of OP’s spouse as of the date of the marriage certificate, what then?

Good question.  It would just require a brief explanation.  All officials concerned are aware of the procedures, and are not looking for technicalities to justify denials.
