Self-employment income will be evaluated based on the most recent tax return and supporting documentation.  Make sure you follow the I-864 instructions and include all of the forms and schedules:

If you selected Part 6., Item Number 2. that you are self-employed, you should have completed one of the following forms with your Federal income tax return: Schedule C (Profit or Loss from Business), Schedule D (Capital Gains), Schedule E (Supplemental Income or Loss), or Schedule F (Profit or Loss from Farming). You must include each and every Form 1040 Schedule, if any, that you filed with your Federal income tax return.

Sometimes self-employed file their 1040 with a Schedule C that overstates or understates actual business income, that's why they need to see the schedules.  Total income on form 1040 for the most recent tax year is the number they will use for the basis of their evaluation.  Often we see cases like these where filers use gross revenue from their business as "income," which is not correct.  Good luck!

Current income is what matters. You don’t even have to include the old ones, they are just optional

Information from three tax returns IS REQUIRED to complete the affidavit of support.  Whether one good year is enough depends on the totality of circumstances including the country the interview will take place.

The "Total Income line" from most recent return is the source for determining "current income" but the Consular Officer's job is to consider the totality of circumstances.  Just barely meeting the minimum is not in and of itself any assurance of approval by a Consular Officer.
