Can an EAD combo card holder ("Serves as I-512 Advance Parole) travel into and out of Turkey (with Turkish visa) on a short vacation on the way back from Pakistan without having a problem from the border staff and airline staff at the Istanbul airport? Traveller is married through a K-1 visa and resides in the US with a pending I-485 AOS application.

The I-512 is one of the travel document options on Turkish Airlines check-in kiosk, btw. The airlines and the consulates don't give a straight answer. 

If you have experience with this situation, please share.

Direct flight from Istanbul back to the US?  No Schengen area transits?

CBP will know what an EAD/AP combo card is, so no need to worry about that.  As for the airline staff at Istanbul, I don't expect they'll give you any trouble because of your AP.  They probably deal with many US-bound AP-carrying passengers these days trying to avoid the Schengen area.

Assuming traveler is still married to US citizen or LPR then the traveler is exempt to Schengen Area; UK and Ireland; mainland China; Iran; and Brazil proclamations.

Yup, that's why I asked.  They would have needed to carry other documents to prove they are exempted, if passing through banned areas.  Not applicable for the OP though.
