There is no way to extend VWP admission. It is 90 days flat.

It is possible to call USCIS and be granted a 30 day grace period to leave, in which it won't be counted against her if she leaves within that timeframe. This is a one-off...not multiple times.

Based on what I see, normally you would apply for a satisfactory departure request through USCIS, but with all of those offices closed it appears CBP is processing those requests at some POEs.  I would study your options carefully, and begin that process around 14 days from the expiration date as it is still discretionary.

We spoke with USCIS in our local field office after filing a request and you can only request an extension (satisfactory departure) 7 days before it expires and with that you must prove why, i.e a cancelled flight or sickness that prevents you from traveling.

We applied for Satisfactory Departure with CBP in LAX. Submitted the required docs. After a week we got a rejection email. The reason: The airlines that cancelled my husband's flight did not mention it was due to COVID-19 (it was). CBP wanted this fact to be specifically mentioned. We reached to the airtlines. The airlines since then got bankrupt, and it takes forever to get what you need. Thus, we missed the deadline to refile as my husband's ESTA expired.

But by then we did not care anymore as we filed our AOS package for him.
