Are any of those things really required to file AOS? I know that financial docs for the I-864 are required but I was under the impression that evidence for the relationship joint accounts, household bills, etc. were needed at the interview. I'm preparing to send off our packet this week and want to make sure I have included everything that is needed.

Not required.  We sent my husband's AOS packet just weeks after marrying, so of course we did not have any shared accounts or bills yet.  Just sent the financials and our marriage license.  No RFE, everything was accepted, and we are waiting for an interview date.  Now that it is 6 months later, of course we have much more documentation to bring to the interview.

USCIS realizes that people who are newly married don't have all the commingling yet.

Yes, I understand that waiting is dangerous which is why I wanted to go ahead and file. We don't have any accounts together yet so I don't have anything to send besides what is required.

We only sent in what was requested. However, for our interview we are taking joint bank statements, joint lease and so on. You should be fine! We didn't get an RFE for any more evidence needed.

You just need the marriage certificate in regards to "proof". You bring evidence to the interview.

Hello,

My fiance and I are preparing to send his AOS packet,  I'm just wondering how much evidence is required?  Do you need as much as for the K1 packet?   Any other tips or suggestions are welcome.

you mean bonafide marriage/relationship evidence to file aos? nothing.. MARRIAGE certificate and affidavit of support is enough. follow the instructions in I485 its very understandable and easier than applying for k1 visa.. gather evidence for aos interview but still then even at interview they are aware that some documents are not easy to get if you are a new immigrant.. good luck
