Im just wondering what people's opinions are on the chances of me getting an E3. Being a qualified baker with 15 years experience, and having a job offer making speciality australian style baked goods?

Quickest would be to premium process an O1. Get a good lawyer and see if you can qualify (unlikely but if money doesnt matter then you might as well try). My EB3 took 2 years pre covid.

One of a number of Australian-food-based companies in the US, that’s all. It’s a huge country with many immigrants, you’re going to find some kind of producer of food for every nationality you can think of somewhere

Its for a specialty role at his bakery, so he would have to advertise and convince that no one is able or capable of doing that specialty role, which I think he can prove.

He just said he is willing to sponsor me, I've been talking to an immigration lawyer who is working with us both. She suggests the best visa is the eb3 (skilled worker) but because of the time it takes to process, we are trying to explore all options.

So they were already worried when you were coming for 3 months, and now you want to make your ties to home seem even weaker by wanting to come for 6? I mean, your decision if you want to apply for it, I just think it’s potentially endangering your main chance of seeing her. Again, if your B visa application is refused you will not be allowed to use VWP any more. Actually that will probably also happen if an F visa application is refused come to think of it.
