I was in the same position a couple of weeks ago, call knightsbridge every day or go on their cancellation list. They called me after one day and I got an appointment for the following week!

London has approved 100% in the past for fiancés. The goal is 125% because you will have to meet that level after you enter the US in order to get a greencard.
The good news is that it's not about last year's income. It is current income. Multiply her current monthly salary by 12 to come up with her current yearly salary. Bring proof such as an employer letter verifying that amount or several recent pay stubs to back up the current salary claim.

You should start getting your information straight from the London embassy website because every embassy has slightly different methods. The will tell you all about the police certificate.
Start here with their Step 1,2, 3, 4 after younscroll down https://uk.usembassy.gov/visas/fiancee-2/applying-for-the-visa/
Then click the rest of the topics up at the top like "Required Documents".
The poverty guidelines are found on Form I-864P on the USCIS.gov website

The US will conduct it's own background checks on you from this side. So no you don't need to get anything from this side.
As for the poverty like, for 2 people (petitioner and beneficiary) believe it is at about $21,000 ..... I'm not entirely sure myself so I'll let others get that specific number for you.

The only thing I can think of is our packet what we sent it was quite big due to visiting each other 7 times over the three years we have been together some was for three months at a time so we had a lot of trips to include.
