the best answer is the truth and be honest. it is really okay to meet once.... there's no problem with that as long as you two met each other. 
its a long journey but always pray.. waiting for approval is so frustrating but worth it at the end.

I met my fiance in the last week of February 2017 and officially boyfriend and girlfriend in march 6, 2017. we first met in june 18 and got engaged in june 18,2017 the time we first met.  we filled august  for fiance visa. we just met once. and in february 17,2018 our cased was approved. Goodluck. as long as you two met within two years in filing fiance visa youre good to go and as long as you have bonafide relationshiip together so dont worry.
