They do not have to go back and you do not need to be so drastic. Just send in whatever you can and. In worst case event they will call you in for a interview. They might choose to do a stokes interview to see if your answer match.
I am sure if your genuine couple you will pass the interview easily. They deny the ROC in a really rare event. Don't panic just send in what you can and prepare for a stokes interview.

You rather send full bank statements instead of a letter only as just the letter shows nothing. I can open up an account in every US bank with my wife and get a letter, that doesn't mean we are financially Co-Mingled. You have to send full statements showing deposits and withdrawal proving your financially co-mingled life.

Its your family issue, really not sure what you expect people to say. But she is a adult and within her rights to make up her own mind and choose her own life partner.

I have 4 couple friends who have filed their citizenship petition based on 3 year rule. None of them had any problem what so ever. All had a standard interview and thats it.,,
I really don't think it makes that much of a difference.
