Having documents in "Accepted" status is not enough.  Your case is DQ-ed when you get an email and CEAC inbox message with the words "Documentarily Qualified".  Only after getting that DQ message will your case be put in line for interview.  How long you have to wait in line depends on the backlog at your consulate.

There is no required order. You can submit whatever you want at any time. Once you have all your stuff sent the NVC stage doesn't take a long time, so be ready to open a bottle of champaign soon. 😁

Correct, and the case gets sent to the Consulate, only AFTER the interview date is assigned.  Immediately after, electronically.
