How to make permanent change of address before GC interview

Hello, 

My I485 application is at the "ready to be scheduled for interview" stage, but we are moving to a different address permanently. Should I use AR-11 to change address? I can't find any place else to change it, since there's no option on the USCIS account for it.

Yes, immigrants (LPR) use AR-11. 
USC (your spouse) would use I-865 - complete, print, sign and mail in. Not applicable in your case as you’re on H-1B visa.

Right now I am on EAD, and awaiting GC interview. I have submitted AR11 online now. Does she still need to submit I-865 for form I-130?

No.  I865 is only for updating the address for the i864

Actually, not. I used it successfully to update my address while I-130 was still pending and there was certainly no I-864 in sight.

When Should I Use Form I-865?
If at any time in the past you completed Form I-864, Affdavit of Support, to sponsor an immigrant, you are required to report your change of address within 30 days of the change if the sponsorship agreement is still in force.
The sponsorship agreement remains in force until the sponsored immigrant:
1. Becomes a U.S. citizen;
2. Receives credit for 40 quarters of work;
3. Departs the United States permanently and either formally abandons lawful permanent resident status (by fling Form I-407, Record of Abandonment of Lawful Permanent Resident Status) or is formally held in a removal proceeding to have abandoned that status;
4. In a removal proceeding, loses the lawful permanent resident status that the sponsored immigrant obtained based on your Form I-864; or
5. Dies.
NOTE: Each sponsor must submit a separate Form I-865 to report an address change, even if sponsors share the same address.

Do USCIS accept cursive signatures produced on Adobe Acrobat? Or do they still require wet signatures, i.e. print document out, sign, and mail it? Or can we sign on the laptop using touchpad and print it out and mail it?

Also I am on EAD now, if my wife has some delay in submitting I-865, would it affect where they would schedule interview? I have already received confirmation for AR-11 submission.
