Do we have to file the EAD and AP...

It's optional, but highly recommended. And they are free to file: https://www.uscis.gov/system/files_force/files/form/i-485instr.pdf Page 16 "If you properly file Form I-485 and pay the required fees, you may file Form I-765 and Form I-131 without paying additional fees. You may file these forms together, or if you choose to file Form I-765 or Form I-131 separately, you must also submit a copy of your I-797C, Notice of Action, receipt as evidence that you filed and paid for Form I-485."

When should we file out the I-693 form. Some told us that we don’t file this until after the interview, because it has to be within a year and if the process is longer we will have to redo it.

If you already sent out all you I-485 paperwork then you can wait till you get an interview date before you do your I-693. That’s what I did with mine.

Yep, schedule your medical once you know your interview date. Then take the sealed packet they give you to the interview 😊

I-864P is the list of poverty guidelines, so nothing is sent with it and it itself is not sent.

The I-864 packet should include at least the most recent year's tax return copy (IRS transcript is simplest to do so) + evidence of current income + evidence of any assets you use 9assets are optional).

Current income if you are a W-2 worker is usually demonstrated via an employment letter and pay stubs.

If this is for a joint sponsor, evidence of their status as a USC or LPR should be provided as well.

If living abroad or recently lived abroad, evidence of US domicile (or intent to establish US domicile) should be included.
