Each application needs its own accompanying set of documents. They need to be able to each stand alone .

Amanda read the instructions for the I-131 and I-765 and they will tell you how to do each form and what evidence to include. The AOS packet is big compared to what those other two need.

I am assuming that you are speaking about additional documentation when concurrently filing for AOS/EAD/AP.  I don't know if things have changed that much as when we did the AOS part of our immigration journey. It has been a point of inquiry and contention for some time. Of course, there are those that say that you must provide additional evidence as requested; and there are those that claim that you don't need to provide any additional evidence, that you already have included a copy of the requested additional evidence with the entire AOS submission package.  The thought being that they are pulling apart the entire AOS package, scanning pages and assembling your numerous petitions/applications/documents associated with the AOS process to suit their  purposes anyway. The VJ Guide says to "include any additional required supplemental documentation." The official guides statements for the forms, ranges from "be sure to file it all together,"

https://www.uscis.gov/i-485 , to the AP and EAD instructions, "you must file your application with all required evidence," https://www.uscis.gov/sites/default/files/files/form/i-131instr.pdf  , to "Did you provide the following?" https://www.uscis.gov/i-765Checklist .

For our AOS/EAD/AP package submission for my wife (K1) and stepson (K2), we included the evidence and documentation as described in our attached redacted AOS packages cover letters. We used that cover letters as a check-off list for each AOS packet. Maybe we got lucky? We received no RFEs and successfully completed our AOS in 134 days.

YMMV

Good luck on your immigration journey.
