Is there any way to work undercover?

Undercover? The correct term is under the table, and NO, it is not allowed. Don't do this. The company who pays you will be fined hefty amount and sanctions placed against them. Your AOS will be denied and you will have no status in the US and subjected to deportation. It is a bad idea all around.

So you don't even have legal status in the country and you already are breaking the law. This will reflect poorly on you in the future.

Of course the government will know as you will have to file taxes. Or do you plan on breaking that law also?
