I just got an email from the US embassy with my interview date and time. I never scheduled an interview yet nor have I filled out the DS160 form as of now. I was under the impression that I schedule the interview after I fill out the form.

The interview is scheduled for December, but how can I reschedule the interview for the February?

Yeah, the DS-160 is like a shorter version of the I-129F basically so you already know all of the answers. I had mine done in 20 minutes. Why do you want to wait until February?

My fiancé is still unemployed and we're having trouble getting a cosponsor. She's been getting a lot of interviews though. We figured by Febuary she should be back to work and have employment letter + pay stub(s). Her taxes show that she made well above the poverty line in the last 3 years though, and she got a 3 month severance package in October from her past job. We're not sure if that's enough or not, but we're leaning more towards playing it safe.

What do you guys think? Take our chances and go for the interview in December and hope they don't ask for a cosponsor, or reschedule it to February which will be by the time she's employed?

This is a consulate specific question that should be only answered by someone familiar with your consulate

YMMV
