So my wife and step-teenager finally got their work permits/Advance Parole, and then she got a message  from USCIS that they would schedule  her Green Card interview. But that was like 3 weeks ago and we never received anything in the mail. I'd call, but I work until 5 and they wont even speak to me without my wife on the phone. Do we just sit around and wait forever, or are we supposed to call ourselves and schedule the Green Card interview ? And speaking of that, what all do we need to have with us at the interview and where can I find a study guide/prep for the interview ?

We got our letter exactly 1 week after our status changed to "inteview scheduled."  You will need to find a way to call USCIS with your wife in the room so they can speak to her.  Or your wife can call on her own.  Ask for a Tier 2 supervisor.  The Tier 2 can provide the interview date, time, and office location.  I'm not sure what USCIS does about missing letters, but you need it to get in the door for your interview.  Ask the Tier 2 how to get another or call the local office. - Jason

There’s a difference between status saying your case is “ready to be scheduled to interview” and “your interview in scheduled”. If the case is ready to be scheduled for interview, it’s hard to say when it’s going to change to interview schedule, it will depend on your field office, check the processing times at us is website

you should read around the aos forum for interview reviews and whatnot, everyone has a difference experience and there’s not really a guide or prep. Be truthful, bring whatever they state on their letter and that’s it
