1. I had filed an immigrant application for my wife, and she is supposed to go for an interview in Mumbai consulate in 3 weeks. 
2. My affidavit of support was based on my W-2 income, and I got laid off last week. The affidavit of support was filled out 3 months ago, and the information in that is correct as of the date it was signed. 
3. Given the change in situation now, do I need to fill out new AOS (based on my assets - as I am still unemployed) which my wife can carry to the Mumbai consulate. 


Please advise.

If your assets are sufficient (more than 3 times the required income in "liquid" assets) then it would be a good idea.  However, I would advise that she keep the new affidavit and documentation of the assets in reserve, and present it ONLY if the issue comes up in the interview.  If she is asked what you do for a living, she'll need to be truthful about your layoff and provide the new affidavit to substitute for your original one.  If the issue doesn't come up, then no worries.

Only if his liquid assets are NOT sufficient.  Most adults accustomed to supporting themselves, are reluctant to obligate others to the terms of an I-864 contract unless absolutely necessary.  The OP does not sound like a "Millenial" to me. ^_^

@pushbrk yes, I have sufficient assets. Do I need to list out all the assets I have , or I can show only enough to show 3x the required income.

If you have read the definition of "liquid assets" in the I-864 instructions, AND your liquid assets are sufficient, I would list all the liquid assets, or maybe stop and 1.5 to 2 times the required assets.  If not enough of the assets are "liquid" get a joint sponsor.
