I had previously read about someone's letter of intend being denied for not being thorough enough. What should I be sure to include?

Also, we only plan on marrying in a courthouse during the 90 days so that we have more time to save money.

Thank you!

It's not length but content.

YMMV

Ours, other than petitioner's and beneficiary's information, was about 3 lines that said something along the lines of: " Dear Sir or Madam:  I (petitioner) do hereby state that I am legally able and willing to marry (beneficiary), and intend to do so within 90 days of her arrival to the US using the k1 visa."

I was thinking the same thing.  In over 10 years of being on this site,  never have I been aware of a length issue

YMMV

I'll see if I can find it. They said they needed a new letter of intent from only the beneficiary and also more evidence of the relationship.

Please do. Thanks.

A signed letter of intent should be provided from both the petitioner and the beneficiary. It's also not uncommon for them to request a new one when sending an RFE for something else if it's been a while since the I-129F was filed (as is the case now). It doesn't necessarily mean anything was wrong with the first one.

They would not request more evidence of the relationship as it is not a requirement to provide this with the the I-129F. You can provide this with the I-129F ('frontloading"), but it's for the CO to review at the embassy, not reviewed with the I-129F. They more likely requested additional evidence of having met in person at least one within the past 2 years before filing.
