I had the letters that we sent with the I-129F notarized.

However, for the interview, where they request updated letters of intent, I did not notarize.

Both were accepted. Can't worry about it now that it's sent. If they require a notarized letter, you'll get an RFE. Maybe you should have new letters (notarized) ready, so if you do receive the RFE, you can send it right away.

The letters of inent for the I-129 packet do not need to be notarized they just need the original signatures as you have done. The instructions on the form clearly tell you if anything needs to be notarized. Anything translated needs to be authenticated (I don't know much about this as my fiance comes from an English speaking country), and for the interview the I-134 needs to be notarized...not the letters of intent. No worries, you did it right.

The only thing notarized in our case so far was the I-134 form, the letter of intent does not need to be notarized, just signed and dated.

I did not have mine notarized either, the only documents you should have notarized are foreign documents that need to be transulated as far as I know.

Not even translations... translations must include a statement from the translator attesting to there language ability.

YMMV

Letters of intent do NOT need notarization, nor do the letters of intent for the interview. As far as I know, no one has received an RFE for not having a letter of intent notarized. They merely have to be original signatures.
