So my fiance is going to have her interview at the end of this month and I'm feeling kind of nervous about the affidavit of support portion.

I will give a quick run-through of the last 2 and current years:

2015 - Halfway through the year, while in my masters program, I landed in an internship and at the end of the year when I filed my taxes made enough to break the 100% cut off but not the 125%.

2016 - I wound up getting a full-time permanent job at the same place where I earn $90k which breezes through the 125% cut-off

When the embassy goes over this kind of backstory will they tend to scrutinize over how stable my earnings might be?

I am not sure about Romania itself, so it may be better to ask this question in your country specific forum, but usually if you can provide the last 3 months of paychecks and the employment letter that will be sufficient! That is how most get through situations similar to yours and they haven't had much issue.

Send her a letter of employment stating your full time permanent position and annual salary + some recent payslips - you'll be fine.

If it isn't difficult, it isn't worth it.

What supporting documents have you send your fiancé with the I-134?

I sent her a letter from my employer, my 2015 tax transcript, tax return and w2 form, and a letter signed by me explaining last year's situation.

I will be sending her my paychecks online as i get direct deposit, but my company hr has some pdfs with the paycheck

They tend to be understanding about having been a student, then graduating and starting your career. Explaining you are a recent graduate that began your full-time permanent position in April 2016 earning well more than the 125% income requirement for sponsorship, along with letter from employer and last 6 months of pay stubs should do it.

Well, 6 months is what is asked for in the I-864 instructions, and you will soon need the I-864 after married and filing for AOS. Many consulates base what they are looking for with the I-134 off of the I-864 guidelines. The I-134 for the K-1 visa is more lax, and there are no definitive requirements for it due to the K-1 visa being a special non-immigrant visa with immigrant intent and processed through the immigrant visa units of the consulates.

You just need to follow whatever instructions your consulate might provide, and convince the CO that the intending immigrant will not become a public charge. The CO has the sole discretion, and some consulates do not even need to receive an I-134. It is not an actual requirement to get a K-1 visa.

c. Public Charge, Evidence of Support:

(1) A K visa applicant and any accompanying children must meet the public charge requirement of INA 212(a)(4) like any other visa applicant. Evidence of support is usually requested by the consular officer. There is, however, no absolute requirement that an affidavit of support or other public charge documentation be presented. It is only necessary that you be able to conclude that the alien is not likely to become a public charge. It would not be unusual, therefore, for a healthy alien of working age, applying alone, to be able to establish eligibility during the visa interview without the need for substantiating documentation.

(e) To substantiate the information regarding income and resources, the sponsor should attach to the affidavit a copy of the latest Federal income tax return filed prior to the signing of the Form I-134, including all supporting schedules. If you determine that the tax return and/or additional evidence in the file do not establish the sponsor's financial ability to carry out the commitment toward the immigrant for what might be an indefinite period of time, or there is a specific reason (other than the passage of time) to question the veracity of the income stated on the Form I-134 or the accompanying document(s), you should request additional evidence (i.e., statement from an employer showing the sponsor's salary and the length and permanency of employment, recent pay statements, or other financial data).
