I actually made those a few weeks ago. I failed to recognize that the flour I used was gluten-free until after the fact, so the placebo was weak.

I felt about the same as when I made gluten-laden crepes last year.

I was talking to a doctor today , who is a salesman. He concurred. The whole Gluten ####### is slick marketing. Gluten affects less than 1 % of the population

Always fun to roam the aisles of Whole Foods and Trader Joe's here in Los Angeles and find coffee labeled "gluten-free." Tends to be very popular in certain areas of L.A. with vaccination rates similar to South Sudan.

someone sneaked in some 'gluten free pancake mix' a few weeks ago,

and I used it all in one setting.

ALL of my housemates have chastised her for buying this crup, as it tastes like donkey's poo... Alas, her only point was - 'It was a pretty picture of a stack of pancakes, and we all LIKE pancakes when you cook them ! '

Ya, there was some biological aftermath as well, bordering on the toxic-waste variety.

And no, not one of my housemates enjoys explosive diarrhea. Not one of them !

Gluten does some very bad things to that 1% though. The average person who wants to try "gluten free" would actually be better off just avoiding wheat products.

INGREDIENTS
    • 1 1/4 cups buckwheat flour
    • 3 large eggs
    • 1/4 cup vegetable oil plus additional for skillet
    • 3/4 cup nonfat milk
    • 1 1/4 cups (or more) water
    • 1/4 teaspoon salt
PREPARATION
    1. Place flour in medium bowl. Whisk in eggs, 1/4 cup oil, milk, 1 1/4 cups water, and salt.
    2. Heat 10-inch-diameter nonstick skillet over medium-high heat; brush pan with oil. Add 1/4 cupful batter to skillet; tilt to coat bottom. Cook crepe until golden on bottom, adjusting heat to prevent burning, 30 to 45 seconds. Using spatula, turn crepe over; cook 30 seconds. Transfer to plate. Repeat with remaining batter, stacking crepes between sheets of plastic wrap. DO AHEAD: Can be made 1 day ahead. Cover; chill.

Use coconut flour instead of regular flour.

aha - buckwheat ! lotsa noodles done at the house wif da buckwheat flour, made from scratch.

I think it's a win !

I don't have a problem with gluten, really. But my coffee and tea is gluten-free, so, like Nature Boy, I wanna live a healthier, happier life without them nasty bowel trajectories.... [Reminder, Nature Boy - schedule that high-colonic next week! ]

My wife uses buckwheat for waffles and pancakes - they are pretty good. It has a bit of a funny taste to it though. You have to get used to it.

05-05-2008 = Infuriating $12 call to non-English-speaking consulate appointment-setter.

05-06-2008 = Better $12 call to English-speaker; "joint" interview date 6/30/08 (my selection).

06-30-2008 = Stokes Interrogations w/Ecuadorian (not USC); "wait 2 weeks; we'll mail her."

07-2008 = Daily calls to DOS: "currently processing"; 8/05 = Phoned consulate, got Section Chief; wrote him.

08-07-08 = E-mail from consulate, promising to issue visa "as soon as we get her passport" (on 8/12, per DHL).

08-27-08 = Phoned consulate (they "couldn't find" our file); visa DHL'd 8/28; in hand 9/1; through POE on 10/9 with NO hassles(!).
