3 years is for the I-864 when you adjust for status. 1 is usually fine for the K-1 interview and I-134.

Removing Conditions Timeline

Aug. 10, '17: Mailed in I-751

Aug. 21, '17: NOA1

October 23, '18: NOA2- approval

October 30, 18: 10-year GC received

Current year ( 2014) or three years?

We had our interview at the Costa Rica embassy. My 2014 taxes were below 125% poverty line (from living in Costa Rica where I met my fiance!) so I provided 2013 and 2012 as well which were well above. No questions asked and approved easy peasy.
