I see that sending in the previous 3 years transcripts is "optional" according to form I-864.

What's a situation that would require that? I make above the 125% poverty line cutoff and I am the only sponsor so I guess I don't need to send in old tax transcripts? (I guess technically I can file the I-864EZ but I am doing the I-864 longer version just in case.)

Is there an advantage to sending in or not sending in the previous years' tax transcripts? Should I save a tree and just send in 2013's tax return and W2s?

Like the above poster stated, unless requested only the past or more recents years ITR should be sufficient. Some people, depending on their personal situation(s), choose to send in more than one year. I only sent in one year, the most recent year's ITR and that was sufficient. Since, you are concerned with Brazil, you might want to research that country's specific requirement.

We used the I-864ez (not using assets so why send a longer form?) and sent 3 years of tax transcripts to show my husband had a history of being employed and making above the poverty guidelines. We also sent 6 months of bi-weekly pay stubs.

isnt the difference business related income and not just w2 from employer for the 864ez?? doesnt just have to do with assets...

No its not just asset related, you are right, but for us, we met all the conditions on the form so used it.
