I've tried searching for this question -- but have not found any topics able to answer my question.

My AOS was approved for Green Card on July 29. but we never recieved the card. I have filed for a I-90 for a replacement.

I did not file for a work permit-thinking that the Greencard would come soon.

My question:

Can I apply for a job, when I am waiting for my Green Card to come in the mail? I should get it within 30-60days?

How can I show proof of work eligible?

sure - if you 'match' the requirements on the I-9 document. For you, should be

green card + ssn

No Green Card? make infopass appointment, bring in the approval notice, get I-551 stamp in passport - this is 'same as greencard'.

Once you have the stamp, if you not have SSN, get to SSA office, apply for SSN.

** moved from "Adjustment of Status (Green Card) from Family Based Visas" to " Working & Traveling During US Immigration" as this is relating to working with GC approved but no GC received**

I already have my SSN :)

That will work just fine. Another option is that if you have already filed the I-90 to replace the card, and have received the NOA 1 for the I-90, you can also show your employer the I-90 NOA1. You will then have 90 days to show them the actual GC.
