How do you make it?

This is how my Mom taught me to make baked custard.

I generally make it in a medium sized glass baking dish.

Take 4 eggs, beat them until they're mixed, add in just under 1/4 cup sweetner (I use sweet and low to keep the sugar content down) - my Mom used sugar - , a tsp of vanilla and then beat the mixture very well. Add 2 1/2 cups of warm milk (not boiled or scalded) and blend thoroughly so that the egg and milk are well mixed. Pour into an appropriate sized baking dish, or you can pour it into individual sized dessert dishes. Sprinkle nutmeg on the top.

Put the baking dish/dishes into a large pan with sides and pour hot water into the pan so that the water goes well up the side of the dishes (an inch at least - or about half way up the sides of smaller dessert dishes).

Bake in a pre-heated 325 degree oven (you can actually bake it at lower temperatures - it will just take longer - shouldn't go higher although if you use lots of water in the base pan you could probably go up to 350). The time to bake will depend on whether you use a large bowl or smaller dessert dishes. For the dessert dishes it will probably be about 25 minutes but check starting about 20 minutes to see if they are done in the center (use a toothpick to check). For a single baking dish it will be anywhere from 35 to 60 minutes depending on what the dish is made of (glass or ceramic), and how much water you use. Mine generally takes about an hour.

The custard should start to pull away from the sides of the dish a little (or start to crack in the center). If it gets 'weepy' then the temperature was too hot, you didn't have enough water in the base pan or it is over-baked. (It will still taste fine) It should have a nice browning starting to happen at the edges and moving in towards the center.

I made 2 dozen mini egg custard thingies, to bring to a funeral, all from scratch.

Mmmmm, custard tart. :luv:

I made a lamb hotpot for dinner this evening, and I have a steak and stilton pie ready for tomorrow evening. I confess to not making the piecrust myself. I hate making piecrust.

i made a baked scrambled egg thing a few weeks ago.. it is kind of similar to a quiche .. it was pretty yummy!
