Hey there!
I have been putting this off and I am sorry for that! I received my letter for BIO appointment about 3 weeks ago (Feb. 27) and it is scheduled for next week, March 17th. A little update of my timeline:
Package sent: 09/15/2020 (I-944 included)

NOA1 received: 10/05/2020Biometrics appointment: 03/17/2021

Hey! First of all, apologies for the delay!
My fiancé had tried to call the CBP but couldn't get through. He stopped trying when we took the Mexico decision. In the meantime, I had contacted them and only received their reply today (as to going through one of the Caribbean islands e.g. Guadeloupe to then fly to the US). They are not clearly saying yes or no, only provide general information (not really surprised...):

For those flying from Mexico to the US, you will have to complete an online questionnaire (afac.hostingerapp.com), take a screenshot of the final QR code and show it at the airport security check.
My flight arrived in Miami 40 minutes before ETA but POE was terrible. Even though there was almost nobody, I spent almost 2 hours in the interview room just because I heard the CBP officer in charge of my case saying that it's been a while that they did not have a K1! They were also confused because they thought I was directly flying from Europe. They hadn't checked my entry stamp in Mexico....... They wanted me to be checked by the CDC until I told them that I had spent 15 days in Mexico before entering Miami. It was so confusing.They then had to regularly check with their colleagues to ensure they were following the correct steps from their end, and finally stamped my passport. Our visa expires on September 2 but we were given 90 days for the wedding (until September 20). After all the craziness we've just been through, I assume you know that we do not want to risk it lol.
I still cannot believe we made it, everything looks unreal. Definitely excited to finally be able to start our lives together, without having to count the remaining days we have together like each time we would visit each other!
For those of us who plan to travel to an unrestricted country or who are still waiting for their 14 days to be over; I am sending you some good vibes and wishing you the best of luck for the rest of your journey! All my thoughts also go to the people who are in the middle of the K1 process. Hang in there, I really hope you will be reunited with your loved ones very soon!

Looks like there are some good news for you and your girlfriend! The wording in the new EO provides that the latter only applies to those who have not been issued a J1 visa - among others - yet (Sec.3). Since she already has her visa in hand - unless I am mistaken-, she just needs to find a workaround to join you in the US i.e. flying to an unrestricted country before entering the US!
Please someone correct me if I'm wrong, especially @HRQX because you are usually good at interpreting provisions

Croatia does not stamp EU passports:
Conversely, Serbia stamp EU citizen's passports given they are not part of the EU yet.
Cyprus being part of the EU, my guess is they do not stamp EU passports (same as Croatia). Please someone correct me if I'm wrong! Maybe you can contact Cyprus border patrol to double check?

Thank God. But it wasn't as I expected. I got the biggest spook of my life. Right before landing the flight attendant told me to wait at the door so I could be the first one to leave. When the hatch opened 4 guys from CBP were ready to escort me. The head of the squad asked me how long I've been in Mexico for. I showed him the stamp in my passport and that's all he needed to know. We then joked about how scared I was and talked for a little bit; very nice people. I just had to go through second immigration just to confirm my arrival. This is Orlando airport btw.
BUT what counts the most is that I'm here. Thank you all for your inspiring messages and stories and I wish the rest of y'all good luck. So; if the CBP squad is waiting for you just know it'll be fine.

I thought exactly the same! I went on Twitter and this is what was clarified by the Mexican Ministry of Foreign Affairs; same terms and conditions will remain in place as they have been since their implementation on March 21:

Hey! For those of us currently (more or less patiently) waiting for their days to be over here in Mexico, the agreement on Mexico-US Border restrictions has not been amended but only extended for another 30 days i.e. until July 21, for now.
My understanding is we should be fine to enter the US via Mexico until that date (July 21), provided we are not subject to another EO by then.

Ok, so I did a little research and I also found this article.

Nixon, Texas Border Coalition Chairman Eddie Trevino, Jr., Borderplex Alliance CEO Jon Barela and Laredo Mayor Pete Saenz recently penned a letter to acting Department of Homeland Security Secretary Chad Wolf urging that the current restrictions on non-essential travel between the U.S., Mexico and Canada be allowed to expire on or before June 22.
(...) On Monday, June 15, the Borderplex Alliance will host the 2020 Border Summit with political, business and civic leaders to discuss the travel restrictions and the USMCA free trade zone."
My understanding is it looks like we will have some news on or after next Monday.

Apparently there are direct flights to the US (Belgrade-NY) with Air Serbia. Only the flights in June are 100% confirmed for now:

I can't believe I am saying this but I am in Mexico City!
From beginning to end, overall went quite smooth.
As I had checked in the day before, I just had to drop my suitcase at the luggage drop-off in Paris (CDG). I was asked where I was going to fly and chatted a little bit because I had an excess bagage and the computer was not cooperating. Other than that, first step from Paris was super smooth. Everyone was super nice to me and Air France took care of the travel from Paris to Amsterdam, although we flew with a KLM plane.
Once in Amsterdam, border police checked my passport and I had to go through another security check for cabin luggage. After that, I waited for my plane to Mexico in Amsterdam's Schiphol airport. Some of the shops were closed but many of them were open. I was able to buy some food and good to go! I carefully followed other VJ members journey with KLM so I made sure to bring a bottle that I filled with water before boarding (only 1 bottle was available for the whole flight to Mexico so I definitely needed it!). We we offered a bag full of snacks and a hot meal for the whole trip. First time I ever flew with KLM and I was pleasantly surprised. It seems like they are doing their best to balance with satisfying customers needs and comply with COVID-19 safety measures. I took some pictures of the "travel" for those looking for some reassurance!
KLM crew then distributed 2 forms (health form and Mexican immigration form) by asking passengers "Mexican?". I did not understand at first as I was distracted, but then confirmed I was not so I was handed over 2 forms instead of 1. Some people did not understand either and by consequence, some of them had to fill in the form once at the Mexican immigration. They had queued but then had to wait again before passing the border. If you want to gain some time once at the Mexican immigration, make sure you have those 2 forms in hand. The immigration officer asked the purpose of my stay in Mexico, how long for, and the place where I was going to stay. I first said I was going to self-quarantine for 2 weeks and they then asked me the "complete" reason. I then told them that I was going to self-quarantine for 2 weeks at my hotel and then fly to the US. They stamped my passport, my Mexican immigration form and let me go. That was it, quite fast.
As someone here posted that Uber drivers are not allowed to pick up at the same place as taxis, I asked someone where I should go for Uber. If you plan to go to your airbnb/hotel etc. by Uber, you will have to go to Puerta 7 (Gate 7).
Also, to reassure my fiancé and my family, and just to be on the safe side, I shared my Uber trip with them so they could follow it live. In the Uber app, you just need to click on "share status" and choose the contacts you want to share the trip with!
I feel safe and I am not really worried about the rising number of cases given that I do not plan on visiting the city and just chill at my hotel and order food online. I feel very lucky and grateful that Mexico allowed me in, therefore I am willing to participate in the ongoing fight against the virus by avoiding unnecessary travels. At the same time, I also hope I will be able to come back to Mexico in the near future, in better circumstances.
I did not sleep in the flight to avoid being jet-lagged, quite tired now but I am not going to complain. I haven't seen my fiancé since last December and I just can't wait for these 14 days to be over. There's eventually a light at the end of the tunnel. PS: I wanted to thank everyone who shared their experience so far from now as it helped me get better mentally prepared to do this journey by myself. I will be forever thankful to you, thank you so much.

No news regarding my EAD card, it still shows " Case was updated to Show Fingerprints were taken"... Hopefully before the interview but I feel like I have high hopes, so I'll see.
