POE is today for me too.

We got visa yesterday and were able to make flight for today.  The tracking info was accurate and it seemed to come fairly quickly.

Had interview on 10/18.
Had a slight hiccup with the medical.
They wanted more information but didn't tell us until the day of the interview.
Our application was set to approved pending medical.
 
Our application was sitting in admin processing per CEAC site.
Went to doctor on 10/31 got everything situated.  Embassy got the documents on last Thursday, today the case was updated and changed to Ready.
Hoping in the next two days we get confirmation.
 
Is it worth calling anyone? Dealing with the US embassy in London.  Not sure who I could even call to get more info.

Medical scheduled for tmrw in London.
Interview scheduled for 10/18.
My girl is freaking out but I keep telling her this is the easy part.
 
Anyone have any tips on how to schedule travel?  I know nothing is for certain until she has visa in hand.  I also know about the 1-2 week to get the visa after the interview.
 
What would be the earliest date it would be "safe" to book a ticket?

Generally saying yes ,it says  u have to take interview within that time period but they would automatically extend it if it is the fault of the Consulate to not to schedule an appointment in time but if you really need extension you can contact the embassy directly by email, telephone or mail explaining the entire situation and why you need additional time. Be sure to include both names completely, the new case number and contact information. The embassy officials are usually pretty good about giving extensions.Extensions are common as the foreign individual may have circumstances requiring longer periods than the visa may allow, such as finishing college. The main thing is to make sure you are completely prepared and that the extension is for a valid reason. Also ,I  think there is a form to extend the time -->Request to Extend Approval of I-129f,

NVC got my case # yesterday.  I called today hoping it'd be in before weekend, got lucky.  My NOA2 was 9/5.
