Sharing my experience on INFOPASS. I was in LA field office. I arrived at 08:45 AM. Only one person in front of me. I checked in at a window, got the number and proceeded to the waiting area. I was called in to another window 10 minutes after. The officer was quite strict. After 1 minute talk he told me wait in the waiting area again. I was called out in 15 minutes again. They took only my GC, not the extension letter and stamped my passport for another year. Then I asked about the reasons why it takes CSC so long now to process I-751. And I got the answer that it happened for 3 reasons: 1. Previous transfers from VSC 2. More people filed I-751 with CSC and... what, I think, had a huge impact on the situation, and what I heard for the first time  is 3. Change of administration.

You don't get another letter. Hopefully you will be approved before travel. If not you will need to make an appointment to have an i551 stamp put in your passport.  You would need to go online book an appointment with your local field office. Normally best to do this around midnight, when appointments are up dated. I should imagine your case might be sorted out before December but who knows given the slowness of everything.

Tax transcripts you can get from the IRS website. Nice thing about them is they're a lot shorter than sending the return.
Don't bother with affidavits, photos or holiday cards. They're only for folks who have no decent hard evidence. They want to see the hard evidence, and you've got that (your list in the first post is roughly exactly what I sent). People get RFEs when they don't send enough of their joint bank accounts, though, so make sure to send statements that cover the entire length of the account, so that they can see it was used - like, one for every month / quarter for the last 2 years.
This is what we sent in my RoC package (handily, I still have the quick contents page I typed up to put in front of the evidence):
Copy of Permanent Resident Card 2013 married-filing-jointly tax transcript 2014 married-filing-jointly form 4868 for tax filing extension Joint bank account statements, 2015-04 - 2013-08 Deed for co-owned place of residence (#address, San Francisco) Home insurance information 401k, life-insurance and health benefit information

Tax transcript is easier in my opinion...less paperwork! Filed married but separate is fine as long as it was filed married. Good Luck.

Federal Tax Return - all forms submitted to IRS by the taxpayer for that tax year
Tax Transcript - an abbreviated version of tax data gleaned from all tax forms submitted to IRS. Generated by IRS, requested by TaxPayer from IRS.
So if you choose to print off from turbo tax, make you submit all the complete forms.

As I wrote earlier . . . it is not necessarily the Immigration Officers who are going to give you trouble. It is commercial agents who are unfamiliar with the documents. They can prevent you from boarding planes, boats, etc., as you try to make it back into USA. They are sticklers on this, because such companies are responsible for the cost of removing you from USA if the Immigration Officer turns you away upon attempted entry. They are just trying to save their company money . . . as they have been instructed to do.

Once you file the I-751 to remove conditions, the USCIS will send you a receipt I-797 NOA letter that states a one year extension on your green card.
Keep the NOA in a safe place, don't lose it.

Don't forget to send a bunch of evidence of bona fide marriage. (Obvious, I know, I'm just making sure you know this because we had people here before who thought it was just a question of sending in one form and they would automatically receive a 10-year GC.)

As long as you have your valid passport, your expired Green Card and your extension letter, you wont have any problems travel out of US and come back.

Well, that may not true. The words that 'you won't have any problems.'
There are several threads here or comments in threads by people who did have problems when traveling in and out of USA trying to use the 'One year extension letter.'
True, most have not experienced problems.
    But some have.
As I recall from reading, most of the problems were not with USA Immigration officials, but rather with airlines.
But some have reported 2-4 hour delays by USA Immigration officials also.

Keep a copy of that 1-year extension letter in your wallet along with your expired green card. If you do travel out of the U.S., you shouldn't have problems returning as long as you have it and your passport and your expired card with you.

I was in exactly the same boat, and I just paid for excess bags, it worked out much cheaper, and some airlines offer v reasonable rates (I flew IcelandAir for example.)
I have some stuff left in storage at my mum's house back home, and will do extra bags again next time I go back and visit!
