What is a 'peace bond'?  Never heard of that.

Married in Canada. Now thinking of moving to the US with wife. 
 

A Peace Bond is a Court Order to keep the peace and be of good behaviour for a specific time period. Accepting to enter into a Peace Bond is not an admission of guilt. There is no conviction registered and there is no finding of guilty, but there is an acknowledgement that the victim may have a concern for their safety. Following this, the charges are withdrawn

So you were arrested?   If so, you will need to disclose that and provide all related court/arrest documentation.

 

You’ve posted in the K-1 section, but you’re married so you won’t be eligible for that visa.   Perhaps a mod will move this post.

 

Is your spouse a USC?   If so, has she/he petitioned you yet?

Disclosing and whether the history prompts a denial are separate issues.  Settling an arrest with a peace bond is unlikely to be any issue in adjusting status.  Why is this being discussed in a visa forum?

You cannot plan to the US on a visitor visa/ESTA and adjust status.  That is fraud.

 

Your US citizen spouse will need to start the spousal visa process by submitting an I-130.

 

You will need to disclose that you have been charged/arrested but then the charges were dropped per the peace bond.  Depending the initial charge and the terms of the peace bond, you may or may not be denied and need a waiver.
