we have a letter stating how we met and a few times we met, when we got engaged and what we love most about each other (declaration letter).

This is not a thing.

1 pic together  documenting one meeting that took place in the past 2 years is the legal minimum.

Really?  Then our I-129 was illegally approved in 2018 🤣.  Hope it doesn't come back to bite us in 6 weeks when we file the N-400!

Okay thank you. I will leave it as is then.

One more question I, the beneficiary signed the additional information/documentation proof too on our I-129f package. My usc fiancé signed the I-129f papers and the rest, I only signed the rest. I knew it wasn’t necessary but I wanted to be sure. Would this be a problem? I suppose not?

No not a problem. We hadn't signed anything besides the form, the check and the intent to marry letters.
