Does it really matter, can the income of the beneficiary supplement the income of the petitioner if the petitioner does not have the requested 125% income of the poverty guidelines?

Here the part where they ask the beneficiary income, saving, assets, in I-864

No, the beneficiary’s income is generally not considered in lieu of (or in addition to) the minimum income required for sponsorship.

At some consulates (London, for example), a beneficiary may be able to self-sponsor at the discretion of the CO, although I haven’t heard of that happening much in recent years.

Does it exist that the petitioner does not have the minimum required and has been approved, but has savings and other assets?

Yes.  There are parameters/requirements which I do not know well, so I'll tag @pushbrk

It's difficult to be of much assistance without more information about the circumstances, but....

1.  Spouse beneficiary income can be added only if it will continue from the same source once in the USA

2.  Spouse beneficiary liquid assets can be used to help.  Takes $3 in liquid assets to overcome each dollar of income shortfall

3.  This is all explained well in the Actual I-864 instructions.  If the OP/sponsor would study those first, then may come back with information and questions we can be more specific about.

This is not as clear for a fiance case because the I-854 is not generally used until after the marriage when adjusting status.
