What documents should be carried while waiting for AOS?

Timeline

My wife and I was not aware we could file for a SSN prior to her AOS and in New York State where we are located, it does not appear we have enough local documents to meet their proof to obtain an ID. Is it sufficient to have her foreign ID, a digital copy of her AOS NOA1 and a digital copy of her passport in case a police officer or ICE asks for identification?

My question is related to this… what is my “immigration status” while I’m waiting on AOS to be approved? Is there an official title or should I just say “awaiting AOS approval”? When My K1 was approved, I was given a Welcome to America guide for permanent residents, but I will not be a permanent resident until I get AOS approval correct?

Technically, you have no legal immigration status after your I-94 expiry date.  But it's fine to just say you are an AOS applicant.  As mentioned above, make sure to always have your I-485 receipt notice on hand as proof that you are authorized to stay in the US while your AOS is pending.  You will become a US permanent resident only after your AOS is approved.
