Timeline

I got a Request For Evidence (RFE) for my Adjustment of Status (AOS) which I was allowed to respond to online using MyUSCIS (rather than physically mailing the missing evidence). As of today (November 19th 2021) my online account says "response was received" for the RFE. Can I trust this message or would it be better to call USCIS and confirm that they have my new documents? 

Note: I have tried calling USCIS but it's impossible to talk to a human representative.

I would trust it. Although I haven’t got this message for my I-485 yet, I got the exact same message for my I-130 that my husband responded to earlier today. It went from that to “actively reviewing your case” so we opted not to mail in our RFE response also as planned. 
 

As difficult as it is to wait patiently, I hope your wait is not anxiety-inducing and you get feedback soon.

On the phone system - If you request Expedite request - you will be transferred to a USCIS representative
