My spouse and I finally got married under our K1 fiance visa despite coronavirus related issues, and we finally got our certified marriage certificate in the mail today.

 

What's next? Just fill out and submit I-485?

We have I-864 filled out but we haven't filed it with USCIS since only I-134 was requested at the embassy.

 

Is there anything else we should be doing now?

You really should educate yourself on the AOS process starting here: 

you have to complete the I864 along with I485 and I944. You might as well file for AP and EAD so your wife can work and travel before her green card is approved. Make sure you have her signed up for health insurance as required in the i944. Besides the link above you should check out the AOS forum .
